The Cantuccio (or Cantuccino) is the Tuscan pastry par excellence. It is the diminutive of "canto" which means corner in the interior of the house - or in general - sliced bread.
The Cantuccio di Prato, traditionally dipped in a coffee or in Vinsanto, is probably one of the most famous desserts in Italy.
The Cantucci of the Desideri family are made according to the traditional recipe without butter.
The ingredients are mixed mechanically, but kneading is only done manually, loaf by loaf. The same is true for the cut, which is cut by hand, biscuit by biscuit.
This type of processing is a speciality of Cantucci dei Desideri. The Cantucci become much softer than those of the competitors who produce them by machine.
