Ne-vo olive oil is an absolutely natural and varietal product - but what do we mean by this?
Our olive oil is not only unblended, but also unmixed and exclusively from olives of the "Koroneiki" variety. We personally manage our olive trees with our employees and harvest carefully by hand at the right time and so gently that the valuable fruit is not damaged.
The health benefits of a good extra virgin olive oil - like ours - are mainly seen in its fatty acid pattern. It has been proven to promote the metabolism. This is due to the so-called iridoids and polyphenols that protect the fatty acids in the oil from oxidation and rancidity and, above all, make up the health value of an oil. Exactly for this reason we can guarantee a shelf life of 2 years - who else does that besides us?
Our Extra Virgin Olive Oil is characterized by very delicate, fresh and fruity aromas and a short pungent, bitter pungency in the throat. These are important indications of high quality!
A high polyphenol content in olive oil is a good indication of:
- a highly gentle harvesting method
- a pressing at the latest eight hours after picking
- processing in a two-phase decanter, in which the olives are pressed without the addition of warm or hot water
- storage of the oil in clean stainless steel tanks
- Filling into light-protected bottles or canisters
