Loison Pandoro allo Zabaione – Italian Pandoro with Marsala Zabaglione Cream
Golden, feather-soft dough with a luscious centre of silky cream, delicately flavoured with Marsala wine and egg yolk. Loison's Pandoro allo Zabaione brings together two beloved traditions of Italian patisserie: the tender richness of Pandoro and the unmistakable character of classic zabaglione. A generous 15% zabaglione cream filling creates a beautiful contrast between airy cake and smooth, indulgent cream.
The secret to its delicate texture lies in 72 hours of patient, artisanal preparation. Natural fermentation with traditional Lievito Madre allows the dough to develop its beautifully soft, open crumb and gentle complexity of flavour. 14% fresh butter, fresh eggs from Italian barn-reared hens, cream and milk lend the cake its golden colour and wonderfully tender consistency.
At its heart, the Marsala zabaglione cream brings a rich, rounded sweetness, complemented by the fragrant warmth of natural Bourbon vanilla from Madagascar (0.2%). Sourced from a Slow Food Presidium, this exceptional vanilla adds an aromatic depth, while a touch of unrefined sea salt from Cervia brings the flavours into harmony.
Before serving, a light dusting of the icing sugar included in the pack gives the Pandoro its traditional snowy finish. Beautiful on a festive table and delicious with coffee or as a Christmas dessert, this elegant creation transforms a classic Italian zabaglione into a wonderfully soft and memorable celebration cake.
