At its heart is Lievito Madre, the traditional Italian mother dough, whose natural fermentation creates a tender, airy crumb. Fresh butter and egg yolks lend a delicate richness, while 2% cocoa powder gives the dough a gentle chocolate flavour of its own.
Generously scattered throughout are 14% dark chocolate chips, made with at least 46% cocoa. Their deep, slightly bittersweet character complements the soft, buttery dough, creating a delightful balance of chocolate intensity and mellow sweetness.
